Final status: Our library property analysis isolated a recent service update which introduced an impacting code issue that prevented metadata updates on documents with certain content types within the SharePoint Online document library. After internally testing that removing the offending change resolved the problem, our internal telemetry verified that our reversion of the service update had remediated the impact.
